My advice, take the leap and cut it. Draw some designs out, get a grease pencil and do it on your fender to get an idea of what it'll look like an just do it. Chop down the bars so you can use them or fab up some custom brackets and fit it that way. There really is little you can do to these bikes that is absolutely wrong. Chopping the bars off will not hurt the strength of the frame, and if you can weld then you can reinstall the bars if you hate it.
Worst case scenario you cut it up and you hate it. Fenders for these bikes are cheap, especially compared to some of those bigger bikes you were talking about at the top of this thread.
I encourage everyone I talk to, make your bike your own. Don't be an HD douche and try to look like everyone else. Be yourself and let your bike reflect that.
