The bike does tend to get jumpy at higher speeds, but you will get used to it (or at least it will bother you less and less once you realize that you are [probably] not seconds from death.) I was a late starter and a slow learner and it took me about 4 months before I could ride on the freeway without crapping myself. I actually like to ride on the freeway now (albeit with a bigger bike) but I am a lot less apprehensive when the GZ does it's wiggle dance.
Take your time, work your way up to it, don't rush the experience - you are only a newb once. Get a copy of Proficient Motorcycling and get as much practice in as you can (as you are doing.) Picked a good time of year to get started.
